GBE Group recently completed a coordinated commercial kitchen equipment installation, bringing together the expertise of our Commercial Catering and Electrical Contracting teams.
The project included the supply and installation of a UNOX CHEFTOP MIND.Maps PLUS 10-tray commercial combi oven, together with a matching ventless hood and high stand. GBE Group’s Electrical Contracting team also installed the new three-phase power supply required to operate the oven.
By coordinating the commercial catering equipment and electrical works, GBE Group provided the customer with one experienced team managing the key elements of the kitchen upgrade. The installed oven also features built-in Wi-Fi, providing the kitchen with a modern and flexible commercial cooking platform.
An Intelligent 10-Tray Commercial Combi Oven
The installed UNOX CHEFTOP MIND.Maps PLUS XEVC-1011-EPRM-MS is an electric countertop commercial combi oven with capacity for 10 GN 1/1 trays and a 9.5-inch touchscreen control panel.
The oven can be used to grill, fry, roast, brown, smoke and cook with steam. Its automatic cooking cycles and intelligent functions are designed to help commercial kitchens achieve more consistent and repeatable cooking results.
The model has an electrical rating of 18.5 kW and is designed for a three-phase electrical supply, making correct electrical planning and installation an important part of the overall equipment upgrade.
For a busy commercial kitchen, this range of cooking functions provides greater flexibility from a single appliance. It can support a variety of food preparation requirements, from steaming and roasting to grilling, browning and food regeneration.
Ventless Hood to Help Manage Steam and Cooking Odours
The installation also included a UNOX XEVHC-CF11 ventless hood fitted with a steam condenser and activated-carbon filtration.
The hood is designed for commercial kitchens where cooking fumes cannot readily be discharged outside the building. Its condensing and activated-carbon filters help reduce steam, latent heat and cooking odours without affecting the performance of the oven.
This type of solution can be particularly valuable in existing commercial kitchens where installing or extending conventional external exhaust ducting may be difficult. Final suitability will always depend on the building, kitchen layout and applicable site requirements.
High Stand with Additional Tray Storage
The oven was installed on a UNOX XWVRC-0711-H high stand, designed specifically for compatible GN 1/1 CHEFTOP MIND.Maps ovens.
The stand raises the oven to a practical working height and provides capacity for seven additional GN 1/1 trays. This creates a more functional cooking station while providing useful tray storage immediately below the oven.
